Spinning a cultural mash-up of the best of Toronto’s eats, Smith creates new classics like French toast made with fresh-from-the-oven banana bread drizzled with miso-butterscotch and a Reuben sandwich topped with homemade brussel sprout Kimchi. Casual dinner fare is re-imagined with Jerk Chicken Pot Pie baked in a curry spiced “Jamaican patty” crust, or for your inner locavore, a grilled Cumbrae striploin served with a slow simmered apple cider reduction. Michael’s passion for the cultural diversity of Toronto perfectly compliments the Gladstone’s unique brand as a nexus for cultural activity. A loyal community advocate, Chef Smith has close relationships with all of his suppliers and supports local growers, butchers and neighbourhood grocers, creating all of his menus with sustainability in mind.
