Sitting down with a bowl of ragout has always been one of the most comforting food experiences for me. A fact I can trace back to my Italian roots and Sunday dinners at Nonna’s that always started off with mounds of saucy ragout.
To my delight, the tender, perfectly salted braised lamb stewed in a delicate tomato sauce took me right back to Nonna’s table. With the addition of sunchokes giving added texture and a little sweetness and arugula and Pecorino ending each bite on a peppery note, I was immediately lost in waves of nostalgia.
