Cooking as an ambassador of Toronto food flavours, culture and Tourism Toronto, our Executive Chef Michael G. Smith is currently in Chicago, representing the Gladstone and the TO culinary scene. Along with esteemed fellow chefs like Patrick McMurray, World Champion Oyster Shucker, Toronto native and restaurant owner of Starfish Oyster Bed & Grill, Chef Smith served up a 3 course Toronto-inspired menu to 30-40 lifestyle, TV, food and travel media in the Chicago area.
Influenced by the diversity of Toronto culture and its food scene, Chef Smith created a cultural mash-up of the best Toronto eats yesterday at City Winery in Chicago. Starting with an ode to Koreatown and Little Italy, Chef Smith presented a Kimchi Caprese followed by a French-inspired crusted black cod with an Indian style pork shoulder and finished with a Greek play on Tarte Tatin, a classic French dessert with a Greek yogurt custard, figs and granny smith apples.
