The Gladstone food program is now in the talented hands of new Executive Chef, Mario Paz. While Mario is busy cheffing up his new Gladstone menus, let’s take a minute and get to know the man behind the white coat.
Chef Mario cut his teeth just down the street at the Drake Hotel, working under David Chrystian and Anthony Rose. Leaving the Drake to eat and travel through California, when Chef Mario made his way back to Toronto he went to work under David Chrystian again, but this time at Hotel Le Germain. Here, Mario developed his love for all things local and sustainable. A passion you can absolutely expect to see carried throughout his new menus at the Gladstone Hotel. Following Le Germain with a quick stint at Earls’ then some time at Mercatto really rounded out Chef Mario’s diverse repertoire but left him hungry for a bit more.
Looking for new inspiration, Chef Mario took to South and Central America for 3 months. Backpacking from Peru to Mexico, cooking in local mom and pop style restaurants and discovering family recipes in Guatemala, this is where Chef Mario connected with his roots and developed his ability to capture comfort cooking in a truly authentic way.
Not stopping there, Mario continued his culinary travels across Asia. Cooking in Bangkok and Chiang Mai, Thailand Mario ate and learned new styles through Malaysia, Indonesia and Cambodia too.
When he’s not in the Gladstone kitchen you can find Chef Mario: snacking on his favorite Waltzing Matilda cheese, supplied by Monforte Dairy and featured on our upcoming new menu, indulging in chicken balls and Chinese-style stir fry or treating himself to a night at The Harbord Room where his friends Cory and Curt head the kitchen.

Given his roots, you can expect not only a dedicated locally sourced menu, but one that’s as diverse and delicious as Mario’s travels, reflecting his favorite comfort foods while highlighting his ongoing affection for contemporary Toronto flavors.
